Each has its own timeline
We set the process for the spirit, rather than forcing every spirit through the same routine.

Kaba Kaba · Tabanan
This is our production floor in Kaba Kaba. We record each batch as it moves through the vessels, the still and final checks before bottling.
Kaba Kaba sits among the rice fields of Tabanan, between Bali’s mountains and the coast. The local water and humid climate affect how we ferment, distil and rest each spirit.
We chose the site for the water, the climate and the room to build the distillery properly. Those conditions now shape the way we work.
Vodka, gin, rum and tequila need different raw materials and different production schedules. We make each one to its own specification.
We set the process for the spirit, rather than forcing every spirit through the same routine.
We keep batches small enough to compare, repeat and improve without losing track of what changed.
We release a batch after it meets its specification, even when that means waiting longer.
The laboratory
The lab is part of production. We measure proof, clarity, temperature and stability, then compare the result with the approved specification for that spirit.
A batch stays on hold when a result is outside specification. We bottle it only after the liquid and the production record agree.
We record proof, clarity, temperature and the conditions of the batch.
We compare each run with its specification and the last approved batch.
When a result falls outside specification, the batch stays on hold.
The approved sample is linked to the production record, batch number and finished bottle.
The standard
"Where was this made,
and what is the record?"
We want the answer to be clear on every bottle. The label states the origin, batch number and production date, and our records connect that bottle to the production run.
Each spirit has its own origin, ingredients and process. We make vodka, gin and rum in Kaba Kaba. Our tequila is made in Mexico.

We distil this vodka in Kaba Kaba and keep the profile clean without stripping away all texture. It is soft, lightly mineral and built for a cold serve or a simple mixed drink.

This is a dry gin with a restrained botanical profile. The aromatics are clear enough to carry through a drink without taking over the glass.

We distil the rum in small batches and rest it in oak. The barrel softens the spirit and adds warmth, while the character of the fermentation remains present.

Our tequila is produced in Mexico from 100% blue agave. The agave is slow cooked, fermented and distilled there, and the Mexican origin is printed clearly on the bottle.

Serving the spirits
We make these spirits for service. They should work in a simple pour, stay clear in a cocktail and give the bartender room to finish the drink.
The production work matters because of what happens in the glass. A good batch should be consistent without tasting anonymous.
Every bottle carries a batch number and production date. Our records connect it to the day and place of production.
House record / sample
A batch scan system is planned for a later phase. For now, the bottle carries the batch number, production date and origin.
